So if i wait for prior to the 1 year guaranty expires as well as register my phone underneath the applecare plan, do i get an one more 2 years from that? does which have me have the guaranty for 3 years then?

No. AppleCare is a one year warranty. It kicks in when your original warranty ends. You have to purchase it before the original warranty expires.
Be aware that AppleCare is not insurance nor is the original warranty. Neither cover physical damage of any kind. Neither cover loss or theft.

You can purchase the AppleCare Protection Plan anytime within the one-year limited warranty period. Your eligibility for coverage under the AppleCare Protection Plan starts from your hardware purchase date. Apple strongly recommends that you purchase the AppleCare Protection Plan when you purchase your Apple product to maximize the additional benefits provided under the plan. So that will be one year normal 12 month warranty and if the care plan is two years, then yes a total of 3 years.
But I might add, that you are only covered for warranty issues, hardware and software related. Damage will have to be taken care of by insurance.
